These Blueberry Green Tea Bars are a way that I can sneak a host of wholesome ingredients into a portable little snack. The recipe consists of oats, blueberries, seeds and green tea and can be easily tweaked to add in even more nutritious ingredients (chia seeds, flax meal, dark chocolate!).
Blueberry Green Tea Granola Bars
Makes 10 bars.
Ingredients:
- 2 1/2 cups rolled oats | - 1/4 tsp sea salt |
- 1/2 cup wheat bran | - 1 cup pumpkin seeds |
- 10 packets Iced Matcha Green Tea, Sweetened | - 3/4 cup dried blueberries |
- 1/2 cup coconut oil, divided | {Tea Drizzle} |
- 3/4 cup almond butter | - 1/4 cup yogurt or white chocolate chips |
- 1/2 cup brown rice syrup | - 1 extra packet of Iced Matcha Green Tea, Sweetened |
Directions:
1. Heat the oven to 350 degrees F. Spread the oats and wheat germ out onto a large baking sheet fitted with parchment. In a small bowl, combine 1/4 cup of coconut oil (liquid) with the Iced Matcha Green Tea, Sweetened to create a tea oil. Drizzle this tea oil onto the oats and wheat germ, then use your hands to gently rub the oil into the oats and wheat germ evenly. Bake for 10 minutes until lightly toasted.
2. Meanwhile, in a medium pot, combine the almond butter, brown rice syrup, maple syrup and another 1/4 cup coconut oil. Stir over low heat until everything melts together. Mix to combine, then turn off the heat and add the vanilla and salt.
3. When the oats have finished baking, add them directly to the pot. Also add the pumpkin seeds and blueberries to the mix. Lightly fold the mixture together until everything is combined.
4. Transfer the mixture to a greased 9″ square baking pan, then lightly pat it down with your hands to create an even layer. After the mixture has completely cooled, cut it into 10 bars and enjoy!
